Recipe: Quick & Easy Caramel Popcorn

Looking for a quick and easy recipe for caramel popcorn? I don’t know about you, but sometimes regular popcorn is just not enough, and I crave that sweet edge that caramel popcorn satisfies. Unfortunately, making caramel popcorn can be a total pain… At least it used to be.

I was given this amazing recipe for Caramel Popcorn a long time ago, when I was a kid. It was the first time I had actually heard of caramel being made in a microwave, and I’ve used this recipe ever since. It is quick, easy, and minimizes the mess that often accompanies making caramel. I totally recommend it!

Quick & Easy Caramel Popcorn

A perfect mix of sweet and crunchy, this favorite snack is the perfect answer to your snack-time cravings.


  • ½ cup popcorn
  • ½ cup unsalted butter (room temperature)
  • ¼ cup light corn syrup
  • 1 cup dark brown sugar
  • ½ teaspoon flake salt
  • ½ teaspoon baking soda

While air popping the ½ cup popcorn, put butter, corn syrup and brown sugar into a microwave safe bowl. Microwave for 1 minute. Stir until ingredients are thoroughly incorporated.

Tip: When measuring out the corn syrup, spray the measuring cup with vegetable spray. It will keep the corn syrup from sticking to the measuring cup, and it will release more easily.

Add ½ teaspoon of baking soda. Put in microwave for 1 minutes. The mixture will lighten and turn frothy. Remove from microwave and stir until froth settles.

Tip: After popcorn is popped, scoop it into another bowl. This will give you the opportunity to fish out unpopped kernels. Those unpopped kernels will get stuck in the caramel and could possible serve to ruin dental work, if you bite down on it.

Pour caramel mixture over the popcorn, using a spatula to scrap out the last, golden ribbons of the caramel mixture. Put tight lid over bowl, and shake until the caramel thoroughly coats the popcorn.

Let sit for 15-20 minutes (with lid off), and then replace the lid and shake again. Serve.

Tip: I have friends who make this recipe and they always put the popcorn in a paper bag, pour the caramel over the popcorn in a paper bag, and then shake rigorously. However, whenever I try this approach, I always end up ripping open the bag while shaking it or the popcorn turns into a giant popcorn bowl and not all of the popcorn gets covered.

Favorite Things About Spring

Spring is here! Well, it technically arrived on March 20th, but it’s arrival has – at least where I live – chased away the last signs of winter. Gone are the cold temperatures and snow – replaced by temperatures in the 60s (and 70s), sunshine, and the colorful buds of flowers. However, it also means that it’s time to get cracking on the front and back gardens. This means rolling up my sleeves, pulling on the wellies, and dealing with the aftermath of winter, while prepping for the blooms of spring and summer. Unfortunately, this spring has brought with it a need to deal with downed trees, broken fence, and a lot more work than usual, but a girl’s gotta do what a girl’s gotta do to make sure my gardens stay in step with the seasons.

While I appreciate (actually love) winter, I also appreciate what spring has to offer. So, here is my list of my favorite things about Spring…

Sunshine… I’m not a fan of the sun. And, unfortunately, spring brings longer days of sunshine. However, I do see the value in the sunshine and just make sure I put a little thicker lay of SPF on. But, with longer days means I get more time in the outdoors with my cameras… Exploring and snapping without having to worry about the clock as much as I do in the winter time, when fleeting sunshine means less time to explore and snap.

Flowers… Tulips, daffodils, crocus, irises… The list goes on and on. I love how spring brings with it these bright and bold bursts of color, especially after the drabness that accompanies winter. While I do appreciate a good snowfall, I also have a great love for pops of yellow, purple, pink, and blue.

Picnics… The Fam is a big fan of picnics. Since I was a little kid, we would go on picnics at least once a week. They didn’t have to be fancy or elaborate, but just sitting out and under a tree, enjoying the quiet and each other’s company was unbeatable. As I’ve gotten older and we’ve carried on the tradition of picnics, we don’t do it as frequently due to the busy-ness of our lives, but we still try to do it at least once a month.

Projects… I have a lot of projects that I need to get done, and spring seems to provide the energy and motivation to get it done. Everything from spring cleaning, organizing the garage, painting rooms, and purging stuff to completing a book project, it is on my projects list that will be tackled during spring. And, if there is anything to know about me, it is that I love to check off items on my projects list.
